Spinach and Mushroom Muffins

My dears, did you know that spinach contains a large amount of water and a very low content of protein, carbohydrates, and lipids?

Furthermore, it has high nutritional value, being one of the vegetables richest in calcium, magnesium, iron, and potassium, as well as vitamins A, C, and folic acid. It is very effective in treating anemia, accelerating blood replenishment after operations, and treating internal hemorrhages.

Mushrooms are one of the most popular, commercialized, and consumed fungi in Western countries. Being low in calories but rich in B vitamins, potassium, iron, copper, and selenium; mushrooms are often present in low-calorie diets.

Due to the properties of these two ingredients, today we bring you this delicious and nutritious recipe: Spinach and Mushroom Muffins.

Ingredients:

- 12 eggs

- 1 package of spinach

- 2 tablespoons of butter

- 6 strips of bacon

- 1 cup of mushrooms

- 1 cup of coconut milk

- Salt

- Pepper


Preparation:

- Sauté the onion and mushrooms until caramelized, then add the spinach.

- Remove and let cool, then beat the eggs with the coconut milk, and season with salt and pepper.

- Add the vegetables and cheese, place in muffin tins.

- Bake for 15 to 20 minutes at 350 degrees.
